Increase the potential success of new menu items by introducing them with a little planning and promotion. Here are a few simple ideas that have worked for my school-partners.
- Use signage or stickers to let students know that their peers voted for the new item(s) in taste tests. Promote menu additions as “New & You-Approved.”
- Provide samples a few days before launching the new menu item. For example, let students taste the new item on Wednesday before you add it to the line on Friday.
- Think about toppings and condiments that complement the new item. If you use a “top it off” cart, make sure it is well stocked with Ranch dressing, hummus dip, or other appropriate condiments. Label each one clearly.
- Give the new item a simple name that includes the key ingredient. Look to cookbooks and fast food and casual dining restaurants for inspiration. Test the appeal of names as part of your focus group.
- Write a simple script promoting the new item and ask students to perform it as part of morning announcements.
- Promote new items with digital signage or colorful posters and other décor.
- Feature the new item as part of a theme day or special celebration.
- Prep the cafeteria staff to ask each student if they would like to try the new item.
- Consider a simple contest. Sampling the new item gives you the chance to win. Prizes do not need to be elaborate. In fact, they can be something as simple as special attention or a privilege, such as the principal carrying your books, VIP seating in the cafeteria, or an extra free period.
- Make the new menu item the “item of the day” and every time a student selects it, signal the sale with a special, fun sound effect. Ring a bell. Play a goofy ringtone.
