Want to fix school menus? Why not ask the students how?

Can we make it fun to eat fruits and vegetables in school cafeterias? My team and I were determined to create a resounding YES!

We asked an important question: “What can we do differently to increase student consumption of fruits and vegetables?” Then we set out to get creative and discover what our customers are willing to buy.

The results: We found an enthusiastic manufacturer who worked with us to develop a new product: “spears.” They cut honeydew, cantaloupe and pineapples into three-inch sections. Then they put the spears into clear bags that made it easy for students to open and push the fruit out so they could eat it on the go!

Schools went from serving 75 portions of canned pineapple tidbits to over 800 portions of the various fresh spear products. Pineapple became the number one seller.

This was achieved through focus group communication. We asked students what they liked, hated and appreciated. Then we used that feedback from our “customers,” to test new foods, new concepts and new packaging. Plus we followed up by bringing the final product to them for approval before any big launch.
